This exceptional lot comes from Finca La Primavera, a second-generation farm in Pitalito, Colombia, owned and operated by José Oliver Galíndez. Originally cattle pasture, the farm transitioned to coffee in the mid-1990s and has steadily evolved toward quality-driven production. Today, La Primavera spans 18 hectares, with nearly half preserved as natural reserve, a commitment to biodiversity that exists alongside meticulous coffee cultivation.
Planted first with traditional Colombian varieties, the farm later embraced Pink Bourbon as part of its pursuit of expressive, high-quality coffees. Believed to be an Ethiopian landrace, Pink Bourbon is prized for its vibrant character, blending juicy, citrus-forward notes with refined sweetness and balance.
This washed anaerobic lot undergoes a carefully controlled 72-hour fermentation, split between 36 hours sealed in plastic bags and 36 hours of dry fermentation after depulping. The result is a cup that highlights innovation without excess — floral aromatics, bright fruit sweetness, and a clean, lively finish that remains polished and approachable.
Brewed as a pour-over, this coffee shines with clarity and depth, offering a modern expression of Colombian coffee that bridges thoughtful processing with a strong sense of place.
